SLOW COOKER TACO SOUP WITH CHICKEN
Ingredients:
3 boneless, skinless chicken breasts
1 (12 ounce) can beer
1 (8 ounce) can tomato sauce
1 (14 1/2 ounce) can diced tomatoes
1 (14 1/2 ounce) can black beans
1 (16 ounce) can chili beans
1 (15 ounce) can whole kernel corn, drained
1 (4 ounce) can diced green chiles
1 onion, chopped
1/2 packet (1 1/4 ounces) taco seasoning
Optional Toppings:
Shredded mozzarella cheese
Tortilla chips (try blue corn chips for a great taste)
Low-fat sour cream
Directions:
Place the beer, tomato sauce, tomatoes, black beans, chili beans, corn, green chiles, and onion in your slow cooker. Stir well. Add in the taco seasoning and stir well to evenly distribute. (Don’t worry…the alcohol cooks out of the beer and just leaves a great flavor.)
Place the chicken breasts on top and lightly press down to cover them with the mixture. Cover and cook on LOW for 5 hours.
Remove the chicken and shred with a fork. Return the chicken to the slow cooker and continue cooking for an additional 2 hours. Serve with tortilla chips, mozzarella cheese, or your favorite toppings.
